CHEF-EXPLORER‘S POWER PACKED CHICKEN & SALAD WRAP
This is one of my recipes that I feed to my own children for hot snacks or cold in their school lunch box the next day. They will in fact scoff this down any time of the day! I have also recently taught kids and parents how to prepare this at school events.
Ingredients 1x Chicken breast skinned 1 Tablespoon Olive oil Pinch Celtic Mountain Salt Pinch of Paprika Your Choice of Whole-meal Tortilla or gluten free wraps Lentil Puree (or a little butter or real Mayo)
Salad 1 Carrot Quarter head of cabbage Half stick of Celery 1 Apple peeled & cored Half tspn of cumin Linseeds Sunflower Seeds Pumpkin seeds Or *LSA *Linseeds, Sunflower & Almonds packed with Anti-Oxidents, Vitamins and Minerals
Chef-Explorer Healthy Dressing 200 ml Extra Virgin Olive oil 50ml Organic Cider vinegar (with the ‘mother’) 1 t-spoon of Tamari Soy Sauce 1 t-spoon Honey Half t-spoon Dijon Mustard Pinch Crushed Garlic
Method Whisk dressing ingredients and store in a dark bottle Wash then shred salad ingredients on processor. Season with cumin.
Process Seeds. LSA can be used if Almonds are liked. Grill, Roast, panfry or poach chicken if preferred. Rest for 5 minutes then carve into thin slices. Alternately, use left-over meat from a roast.
Toss salad in dressing just before wrapping then mix in seeds. You will need a ‘glue’ or paste to stick the wrap when rolled. Traditionally use a little butter or a real mayonnaise, but for the truly health conscious, process cooked organic Lentils into a paste and use that.
For each wrap: Spread with lentil puree, slice chicken breast and use about 50g, add 30g of salad and 5-10g of Ground or whole seeds or LSA. Roll tightly and eat immediately or glad-wrap and place in fridge for lunchbox. |
